Green Eggs and Yum


It's here! The first weekend of our CSA: season one! There are lots of greens ready for picking, but not a whole lot else. Which is the way it is in the spring sometimes. Especially when you are me this year. But by this time of the year, after a long winter, I'm craving fresh greens anyway.


The strawberries in the walipini are giving me hope for a more diverse offering very soon, though.

As promised I have a recipe. A very simple one for the mysterious tatsoi that will be in the CSA bag this week. Tatsoi is a green veggie related to bok choi and cabbage, and is used like spinach; usually steamed or stir fried, but you can eat it raw. This recipe I thought was a good choice because it uses not only the tatsoi, but eggs as well. It would also be very easy to change and personalize for your tastes.

Green Egg Breakfast Sandwich

  • 1/4 cup tatsoi leaves (a handful)
  • 1 egg
  • sliced avocado
  • slice of cheese
  • bread (toasted)
  • salt & pepper
  • hot sauce (optional)

Lightly saute the tatsoi with olive oil, salt & pepper until soft.  Push into a small pile in the center of the skillet. Crack the egg over the greens and fry until the egg is at least over-medium.

Assemble sandwich with avocado, cheese and green egg on bread. Top with hot sauce or other sauce of choice.
